Why didn’t anyone tell me the hyssop plant smells this good?

I just added a hyssop plant to my herb garden because I heard it’s great for attracting bees. I acquired mine at abodelook and the smell is very fantastic which reminds me of a blend of mint and anise. I intend to dry some of the leaves into tea. Why, do you know when to pick them so they are not out of their prick?
